farmers Market Fruit Salsa Recipe

Serves 6 (½ cup per serving)

This fresh fruit salsa works great with peaches and other stone fruits like nectarines, mangoes, and plums. It also tastes good with pineapple and melon. Serve with baked tortilla chips, pork, chicken, or fish.

Ingredients (All EBT-eligible and often found at local markets):

  • 2 medium peaches (or other stone fruit), chopped

  • ½ medium jalapeño pepper (optional), chopped

  • 2 medium tomatoes, chopped

  • ½ medium red onion, chopped

  • 1 medium cucumber, chopped

  • 2 Tbsp fresh cilantro, chopped

  • 1 Tbsp fresh lime juice

  • ½ tsp ground black pepper

  • ¼ tsp salt

Instructions:

  1. Rinse all produce. Scrub the peaches, tomatoes, cucumber, and jalapeño under running water.

  2. Remove the pit from the peaches (or other fruit). Chop into small pieces. Place in a medium bowl.

  3. Remove the core and seeds from the tomatoes. Chop into small pieces. Add to the bowl.

  4. Peel and chop onion. Chop cucumber. Remove seeds from jalapeño and chop finely. Add all to the bowl.

  5. Chop cilantro. Add cilantro, lime juice, black pepper, and salt to the bowl. Mix well.

  6. Cover and refrigerate for at least one hour before serving.
